Pumpkin Bars with Brown Sugar Cinnamon Cream Cheese Frosting

Pumpkin Bars with Brown Sugar Cinnamon Cream Cheese Frosting

Ingredients

For the Pumpkin Bars

• 2 cups flour
• 2 tsp. baking soda
• 2 tsp. pumpkin spice
• 1/2 tsp. salt
• 15 ounce can pumpkin puree
• 2 cups brown sugar
• 1/2 cup sour cream
• 1/2 cup vegetable
• 4 eggs
• 1 TB. vanilla extract

For the Frosting

• 8 ounce brick softened cream cheese
• 1/2 cup salted butter, softened
• 1/2 cup brown sugar
• 1/2 tsp. cinnamon
• 1/4 tsp. nutmeg
• 1 TB. vanilla
• 2 cups powdered sugar
• 1-2 TB. milk or heavy cream

Instructions

For the Bars

1. Add all of your dry ingredients to a bowl and stir. Set aside
2. In a separate bowl whisk together all of your wet ingredients. Combine wet and dry ingredients.
3. Grease a 9x13 pan and line with parchment paper. Pour batter into pan.
4. Bake at 350 degrees for 35-40 minutes, or until bars have cooked all the way through. All to cool completely before frosting.

For the Frosting

1. Beat the cream cheese, butter, and brown sugar together until light and fluffy, 4-5 minutes. Add in the rest of your ingredients until cream.
2. Frost you cooled cake and cut into squares. Enjoy!
