Chocolate Zucchini Cake

You wouldn’t think that a Chocolate Zucchini Cake would be considered a dessert but let me tell you…The first time I tried it, I couldn’t believe how rich and indulgent it really was! You can’t taste the zucchini, and all it does is make it incredibly moist! Although because it does have zucchini, it’s basically health food.

Chocolate Zucchini Cake

Ingredients

For the Cake

• 3 cups shredded zucchini, not drained
• 100 grams brown sugar
• 100 grams white sugar
• 1/2 cup vegetable oil
• 1 TB. vanilla
• 255 grams flour
• 65 grams cocoa powder
• 1 1/2 tsp. baking soda
• 1 tsp. salt
• opt: 1/2 tsp. espresso powder
• 1 1/2 cups chocolate chips

For the Chocolate Glaze

• 3 cups powdered sugar
• 1/4 cup cocoa powder
• opt: 1/2 tsp. espresso powder
• 1 TB. vanilla
• 1/3 cup salted melted butter
• 1/4 cup hot water

Instructions

For the Cake & Glaze

1. In a small bowl, whisk together sugar, oil, and vanilla. Mix until combined.
2. In a medium bowl, add in flour, cocoa powder, baking soda, salt, and optional espresso powder. Whisk together. Pour wet ingredients on top and mix. It will be VERY dry and crumbly.
3. Fold in shredded zucchini. It will take some work, and you could use your hands if needed. Once it's folded in, let the batter rest for at least 5-10 minutes. The batter will become more wet as it sits.
4. Next fold in chocolate chips.
5. Prepare a 9x13 pan with parchment paper. Pour batter into pan. Bake at 350 degrees for 25-35 minutes.
6. Once the cake is done make the glaze.
7. Add all glaze ingredients to a bowl and whisk until combined. Pour glaze over cake.
8. Cut cake into bars and serve. Enjoy!
