Caramel Apple Crumble Pie

Pie is actually the one dessert I don’t…love. So when I opened my bakery I made it my mission to make pies that were classic but also enjoyable to a wide variety of tastebuds. This pie is it. It’s just perfection and requires a nice big scoop of cold vanilla bean ice cream on top. No ifs ands or buts.

Caramel Apple Crumble Pie

Ingredients

Filling

• 1 recipe All Butter Pie Crust
• 1 recipe Salted Caramel Sauce
• 4 cups diced green apples, skins removed
• 2 TB. lemon juice
• 1 cup brown sugar
• 4 tsp. cinnamon
• 1/2 tsp. nutmeg
• 1/2 tsp. cloves
• 1/4 tsp. salt
• 2 TB. molasses
• 1/3 cup water
• 1/4 cup water mixed with 2 TB. cornstarch

Crumble

• 1 cup flour
• 1/2 cup brown sugar
• 1/2 cup white sugar
• 1 tsp. cinnamon
• dash of salt
• 1/2 cup butter, cold, diced

Instructions

Prepare Filling

1. In a saucepan, add all of your ingredients except for the cornstarch mixture. Bring to a boil and let cook for 10-15 minutes until the apples soften somewhat.
2. Then add in your cornstarch mixture, bring to a boil then remove from heat and let cool.
3. NOTE* = This filling can be made a few days in advance! Just refrigerate once the filling cools and store in a sealed container. Let it come to room temperature before baking.

Prepare Crumble

1. In a medium bowl add all of your ingredients. Using a fork, pastry cutter, or your hands, mix the mixture together until fully mixed and it resembles coarse sand. Set aside.

Assemble Pie

1. Preheat oven to 400 degrees. In a pie dish, drape pie crust over the dish and press into pie pan. Poke the bottom of the crust with a fork.
2. Add filling to pie. Then cover completely with the crumble.
3. Put the pie in the oven and bake for 15 minutes. Then reduce oven to 350 degrees and bake for 40 minutes. Crumble will be a deep golden color. If the crust or crumble is getting too dark quickly, cover lightly with a piece of foil.
4. Remove from the oven and let cool completely. At least 2-3 hours.
5. Once cool, drizzle pie with caramel sauce. Then when slicing, serve each pie with fresh whipped cream or ice cream, and an extra drizzle of caramel sauce.
